Pagosa Springs author and chef Tess Challis will be demonstrating "Vegetable Tempura with Ginger Daikon Sauce" this Saturday, March 13 from 10-12 at Nature's Oasis in Durango. This is a free event, so come by for delicious samples as well as tips on how to make the perfect tempura.

As Tess says, tempura is very easy to make as long as you follow some basic principles and use high quality ingredients.

Tess Challis has been a vegan chef for the past 16 years. She has taught several dozen classes on a variety of subjects, including Asian foods, Indian foods, various health topics, and much more. She also provides personal health and wellness consultations. She has been in the catering business for the past ten years as well, and has helped multiple clients lose weight and overcome a variety of health issues. Her conviction is that the healthiest foods are also the most delicious when they are prepared properly.

Tess is the author of the new vegetarian cookbook, Radiant Health, Inner Wealth.
